Red Velvet Snowballs

{Makes around 8 balls}


Made with just a few simple ingredients and no added sugar, this is the perfect treat to feel festive this winter! These little snowballs are 100% vegan and gluten-free and they're great to store in your fridge for when you're craving something a little sweet after dinner.



Ingredients:

1/4 cup cashew butter

1/4 cup almond flour

2 tbsp beet powder

1 tbsp cocoa powder

8 pitted dates

1/2 tsp vanilla extract

2 tbsp shredded coconut

optional 1 tbsp maple syrup for extra sweetness

optional 2 tbsp mini chocolate chips

Directions:

  1. If the dates you purchased have pits, remove them. Then to a food processor add cashew butter, almond flour, beet powder, cocoa powder, dates and vanilla extract. Process on high for a minute or until the ingredients come together and the dates have been blended. Add a little bit more cashew butter if the mixture is too dry.

  2. Roll the mixture into 8 little balls, they should be smaller than golf ball size. On a plate or flat surface sprinkle the shredded coconut, then roll each ball into the coconut and enjoy!


This recipe makes around 8 balls and stores perfectly in the fridge for a week or two. You can also place in the freezer if you don't plan on using in the next week.
